ELISA stands for Enzyme-linked immunosorbent assay. The purpose of this test is to serve as a diagnostic device to locate the specific quantity of an antibody in blood. Simply put however it looks for proteins. Enzymes are proteins. Food allergens such as gliadin (the chief allergen in the gluten complex) are proteins too.
